"Marco Provolo" Spumante Metodo Classico 2016
Description
It is an original wine, bottle-fermented sparkling wine made in the Champagne method.
The first vintage produced of this unique styled wine was 1992, which is still elaborated using a blend of native red berries grapes of the province of Verona such as Corvinone and Molinara, carefully selected and vinified in white, the second fermentation take place in bottle where this wine remains until the degorgement.
It is characterized by a pale yellow colour with very thin and persistent perlage, and a delicate perfumes of white flower and citrus fruits with a light final note of custard cream. At the taste is lively, well bodied and harmonic, long on the finish.
It is something able to surprise.
Pairings: it matches well with seafood based courses and crustaceans but also as appetizer and aged chees. Perfect with intense flavoured courses as smoked salmon or truffle.
Aging potential: 15 year
